This is my favourite soup to make, it’s delicious, comforting and full of nutrients. I double the mixture and freeze it so I always have a quick go-to healthy meal.

Ingredients

  • 1 x butternut cubed 
  • 1 x red onion diced 
  • 1 x thumb ginger grated 
  • 2 x cloves garlic diced 
  • 500ml x organic vegetable 
  • 1 x Tin of coconut milk 
  • 2 x tablespoons of coconut oil 
  • Salt and pepper to taste 

Method

Dice the onion and add to a heavy saucepan with the 2 tablespoons of coconut oil. Cook for 3-5minutes until the onions soften. Dice the garlic and grate the ginger then add to the pan with the onion. Stir fry for another 1-2minutes. Add 500ml of the stock, along with the coconut milk and the chopped up butternut to the saucepan. Leave to simmer for about 20minutes or until the butternut is cooked.

Once the butternut is soft, using a hand held blender, mix until at fine consistency. If you don't have one, use a blender instead.

*Serve with some crusty bread or croutons.
